Today, we’re making a sweet potato and white cabbage velouté that’s simply magical, smooth, comforting, and perfect for chilly days or busy evenings.
A spoonful of cream and a pinch of smoked paprika take this velouté to the next level, and let me tell you, both of my daughters and I absolutely loved it at home!
It’s quick, easy, and so satisfying… There’s no reason not to make it 🙂
The smoked paprika gives the soup that little something extra. It’s almost like adding a hint of bacon, you know, that savory depth, but we keep it vegetarian, which is great! Just be sure to adjust the seasonings depending on your baby’s taste preferences.
Smoked paprika has a strong aroma but is not spicy, making it suitable for little ones when used in small amounts.
Ingredients
For around 700g (25 oz) of velouté:
- 9 oz (260g) sweet potato (peeled and cut into cubes)
- 8 oz (220g) white cabbage (thinly sliced)
- 1/3 oz (10g) onion
- 2 tablespoons crème fraîche (sour cream)
- A pinch of smoked paprika
- A pinch of salt (optional, from 12 months)
How to make this velouté
- Peel and cut the vegetables, then steam the sweet potato, white cabbage, and onion for 12 minutes.
- Place them in a blender with the cooking water (adjust the amount gradually depending on the texture you want), or use an immersion blender directly in the pot, blending until smooth.
- Pour the velouté into bowls and top with crème fraîche (sour cream), smoked paprika, and salt (optional).
Bon appétit!
A little tip from my daughter Alix:
Don’t stir the cream directly into the velouté. Pour it gently on top and let the magic happen… each spoonful blends the flavors right in your mouth. A real treat, expert advice from our in-house soup lover!
Storage
This sweet potato and white cabbage velouté with smoked paprika will keep for up to 3 days in the fridge, in an airtight container. Just don’t add the cream until serving.
It can also be frozen, again without the cream (add it later when reheating).
Frequently Asked Questions
Is smoked paprika baby-friendly?
Yes, in small amounts and from around 10 months old. Smoked paprika isn’t spicy, but it is very aromatic. A pinch in the whole batch is enough to awaken baby’s taste buds. Always introduce gradually depending on your child’s preferences.
Can I substitute the crème fraîche (sour cream)?
Absolutely! You can replace crème fraîche with:
– A spoonful of full-fat plain yogurt or Skyr
– A little cream cheese
– Or simply a drizzle of olive oil
Can I add protein to this soup?
Yes! For example:
– Shredded or finely chopped cooked chicken (steamed is ideal)
– Finely blended ham
– Mashed hard-boiled egg yolk
