Today we’re going to cook cauliflower for baby. Babies love this vegetable because it is very mild, and it is a perfect food for gently continuing food diversification. Serve it from time to time, but not too often to help avoid digestive discomfort. When well cooked and mixed with potato, it is excellent for baby’s meals!
Cauliflower is indeed rich in nutrients: vitamins, minerals, antioxidants… all wonderful allies for baby’s health! Steaming cauliflower helps preserve all its benefits.
Alongside this cauliflower and potato cream soup, we’ll prepare a little ham and Philadelphia, then mix the two together gradually as baby eats. These are very simple, very mild ingredients, but still full of flavor — baby should love it!
Choose reduced-salt ham (as a reminder, added salt is not recommended in baby’s diet before at least 12 months). The Philadelphia adds a lovely touch of creaminess to the recipe. We love it!
This recipe is best served at lunchtime for easier digestion throughout the afternoon.
Here is what you need to make this cauliflower cream soup with ham and Philadelphia for baby (from 6 months, for one portion of about 6.3 oz / 180 g):

Preparation

Let’s start by preparing the cauliflower. Wash it well in a bowl of water, remove the leaves, then keep only the small florets: the tender cauliflower tops. Remove all the thick, hard white parts and keep only the tender little flowers.

Now let’s prepare the potato. Wash it, peel it, then cut it into thin slices.

Cooking
Place the vegetables in the steamer basket and start cooking. Steam for 14 minutes!

Meanwhile, prepare the Philadelphia and ham cream. Because the quantities are small, it is best to use a small, narrow blender.
Place the ham in the blender with the Philadelphia cheese, then add just a few drops of mineral water to loosen the mixture slightly. Blend! (A small, narrow blender really works best for making this ham and Philadelphia for baby. Otherwise, you may need to double the quantities so everything blends properly. You can also simply blend the ham and Philadelphia with the vegetables to make one smooth soup.)


Set the ham and Philadelphia aside.
Once the vegetables are cooked, place them in the cleaned blender with the crème fraîche, then add cooking water until you reach the desired texture (a smooth soup… or a purée, if you prefer!).
Spoon the soup into a small baby bowl and add the ham and Philadelphia on top. Mix gradually as baby eats so all the flavors come through nicely!
