Recipe steps
Today we are going to prepare a recipe for baby tajine, for the whole family, of course!
Baby Tagine
Tajine is a Maghrebi dish. It is a slow-cooked stew, often with meat, vegetables, and dried fruits.
Here, I’ve decided to prepare it with carrots because they’re full of vitamins, add great flavor, and a nice color!
I’ve added dried apricots (you can replace them with prunes, perfect if the baby is a bit constipated…) that soak up the broth during cooking, sliced almonds (be cautious when serving them to your baby—re-crush them to avoid any choking risk, and always supervise), also olives to balance the sweet taste of the apricots.
It’s possible to serve this dish with meat. Choose chicken thighs that you’ll brown beforehand and add to the vegetables during cooking!
It’s not a traditional tajine recipe, but you’ll find Oriental flavors thanks to the Ras el Hanout spice blend, perfect for warming up your winter evenings!
Here’s what you’ll need for 2 adults and 2 children:
Ingredients
- 3 beautiful carrots
- 1/2 onion
- About 15 olives
- 10 dried apricots
- A handful of sliced almonds
- A pinch of Ras el Hanout (or cinnamon)
- Olive oil
- Approximately 9 ounces of raw couscous
Instructions
Start by heating a good drizzle of olive oil in a sauté pan / Dutch oven, with the pinch of Ras el Hanout spices (or cinnamon).
Slice the onion and sauté it in the hot oil.
Peel and cut the carrots into slices.
Cut the dried apricots in half.
Cooking
Add the carrots, olives, and dried apricots to the sauté pan and cover with water. Add salt (optional), cover, and let it simmer for 30 to 40 minutes.
Add the sliced almonds and continue cooking for 10 minutes without covering.
For cooking the couscous, it’s very simple. Place it raw in a container with a knob of butter (1 tbsp of olive oil for allergic people). Boil water (you can add a bit of vegetable or chicken bouillon cube) and pour it over the couscous, a bit more than covering it. Quickly cover tightly with a lid, a plate… whatever is airtight. The couscous cooks in the container for about 5 minutes, do not uncover during this time!
Fluff the couscous with a fork, place it in plates, and serve with the tajine on top. It’s ready!
Bon appétit 🙂
Storage
Once your baby tagine recipe (and for the whole family ;)) is done, let it cool at room temperature for about 30 minutes.
- Refrigerator: You can keep the tajine in the refrigerator for a maximum of 2 to 3 days.
- Freezer: If you want to keep it longer, you can freeze it. Place the tajine in a suitable airtight container for freezing. It can be kept for 2 months.
Tip: When defrosting, place the tajine in the refrigerator the day before or gently reheat it in the sauté pan for a gentle and even reheating.
