Today, I wanted to cook the Swiss chard leaves!
This recipe makes 4 mini Swiss chard leaf flans. We add Parmesan, which gives them a wonderful flavor, plus a little ham (just a small amount, so we don’t overload baby’s body with animal protein).
For these mini flans, first of all, I’d like to share a few “recommendations” and my own opinion on the subject. Whenever possible, we try to respect the recommended amount of egg according to baby’s age. From 10 months, baby can have 1/3 egg; from 12 months, 1/2 egg; and from 18 months, 1 whole egg.
And I really do mean “whenever possible”! For me, what matters most in my daughter’s diet is VARIETY and avoiding excess!
So for this recipe, I recommend serving:
- 2 mini flans for baby from 10 months
- 3 mini flans from 12 months
- 4 mini flans from 18 months
Here is what you need to make this baby recipe for mini Swiss chard, ham and Parmesan flans (from 10 months):
Ingredients
Preparation

Preheat the oven to 350°F (180°C).
Wash the Swiss chard leaves, cut them into strips, then blanch them for 4 minutes in a saucepan of boiling water.


Prepare a bowl of very cold water so you can plunge the Swiss chard leaves into it once cooked. This helps them stay nice and green, which looks much prettier!
Blend the ham until finely minced, then place it in a mixing bowl.

Next, blend the Parmesan just like the ham until finely ground, then add it to the ham.

Once the Swiss chard leaves are blanched, immediately plunge them into the cold water prepared earlier. Leave them for about 2 minutes, then drain them. I even used paper towels to remove as much water as possible!
Place them in the clean blender, blend finely, then add them to the bowl. Mix everything evenly.
Then add one beaten egg and the tablespoon of flour.

Mix well!
Pour the mixture into small silicone molds. I used this multiportion mold, but you can use any mold as long as it is oven-safe!
Divide the mixture into 4 mini flans.

Cooking
Once the oven is hot, place the multiportion mold inside and bake for 12 minutes!
Once cooked, let them cool gently, then serve them warm or cold to baby for lunch 😉
