Today, I decided to share a very gentle, naturally sweet recipe with an original fruit-and-vegetable combination, just like I’ve done before: an apple and butternut squash compote! It’s ideal for baby’s first little jars, from 4 months.
Butternut squash, with its melt-in-the-mouth texture and very mild flavor, pairs perfectly with apple to create a creamy compote full of natural sweetness.
It’s a quick, healthy recipe that is perfectly suited to the beginning of starting solids, with simple, natural ingredients. Let’s get started!
For about 2 portions of compote (depending on baby’s appetite):
Ingredients
Preparing the compote
Start by peeling the apple, then cut it into small pieces after removing the core and seeds. Next, peel the butternut squash and cut it into small cubes, without sacrificing a finger (I always use my amazing serrated peeler to peel it! You can see it right here.)
Steaming
Place the apple and butternut squash pieces in a steamer, or in a saucepan with a steamer basket. Cook for 10 to 12 minutes, until the pieces are very tender (a knife should slide through them easily).
Place the cooked apple and butternut squash pieces in a blender. Do not add any cooking water yet; blend first, then adjust by adding cooking water after the first blend, depending on the desired consistency (start with a small tablespoon and add more depending on the texture you want).
The compote should still be very smooth. We’re looking for a creamy, smooth texture, perfect for baby’s first spoonfuls!
Before serving, let the compote cool to room temperature (we need to be careful with baby’s sensitive little palate!).
Storage
- In the refrigerator: Store the compote in an airtight container for 48 hours.
- In the freezer: If you make a larger batch of this compote for convenience, you can freeze it in ice cube trays to create small individual portions. It will then keep for up to 3 months. Thaw in the refrigerator the night before, or in a warm-water bath the same day before serving.
Frequently Asked Questions
Can I replace the butternut squash with another vegetable?
Of course! You can try sweet potato or carrot, which are both very mild and naturally sweet vegetables. Babies love them!
Can I add spices to this compote?
For very young babies (4 months), it is recommended not to add anything. But from 6 months, a pinch of cinnamon can add a lovely little touch of flavor!
What should I do if the compote is too thick?
Add a little more cooking water to loosen it. You can also use a little breast milk or infant formula for a thinner, even gentler texture.
Can I cook the apple and butternut squash in an air fryer?
Yes, you can cook the butternut squash and apple pieces at 320°F (160°C) for 10 minutes to get a tender texture. Then blend them for a perfect compote.
That said, I will never stop repeating it: steaming is really the best option! It preserves nutrients and is much gentler.
