Recipe steps for baby stuffed pancakes
Today we’re making a recipe for stuffed pancakes for baby with broccoli, Saint-Môret-style cream cheese, and ham for baby and the whole family. Let’s just say this is a delicious recipe you’ll want to make again and again!
I was craving a croque-monsieur, but I thought it would be fun to make something similar with a savory pancake batter (at least, without sugar), adding vegetables too. Broccoli worked perfectly, and I definitely plan to try it again with other vegetables!
Now that I think about it, a nice carrot puree would have worked too.
A little onion for extra flavor, Saint-Môret-style cream cheese instead of the cheese used in croque-monsieur, and ham (nitrite-free is ideal). I promise, you’re going to love them! And they’re actually very easy to make. I’m thinking about making another batch and freezing them so I can pull them out quickly when I don’t have time—or when I’m too tired to cook.

How to make these stuffed pancakes for baby?
To start, make my super-fluffy pancake batter recipe. Good news if you don’t have much time: it’s very quick and easy to make! Just leave out the sugar and add a pinch of salt 🙂
While the batter rises (rests), wash the broccoli and cut it into pieces, then very finely mince a thick slice of onion.

Steam the broccoli and onion for 10 to 12 minutes.
Once the broccoli and onion are cooked, mash them in a bowl with the cheese (Saint-Môret-style cream cheese, but you can use any fresh cream cheese you like!).
Prepare the ham too: simply cut it into 4 pieces.

All the ingredients are ready for making our savory pancakes.

Cooking
Heat a crepe pan over medium heat (or use a regular skillet), lightly oil it with a paper towel, and add a generous spoonful of pancake batter to the pan. Add the filling (broccoli, onion, and cheese) in the center, along with pieces of ham. Add another generous tablespoon of pancake batter on top and spread it out to seal the pancake well.




Cook for about 2 to 3 minutes on each side.
Be careful when flipping the pancakes to finish cooking—they need a quick, confident flip!

Once they are cooked on both sides, our stuffed pancakes with broccoli, cream cheese, and ham for baby and the whole family (from 12 months) are ready to enjoy!
Storage
These delicious savory pancakes can be made ahead and stored to save time. Here is how to keep them:
- Refrigerator: If you plan to enjoy them within 2 to 3 days, store them in the refrigerator in an airtight container. Reheat them in a skillet or in the microwave before serving.
- Freezer: Let them cool, then place them in an airtight freezer bag, separating them with parchment paper so they don’t stick together. To thaw, place them in the refrigerator for 24 hours, then reheat them in a skillet over medium heat or in the oven at 300°F (150°C) for a few minutes.
