Today I’m sharing my recipe for ultra-soft homemade milk rolls, suitable from 10 months, with no preservatives and no refined sugar! The dough is lightly sweetened with agave syrup only.
A family-friendly recipe, suitable from 10 months in small portions. Optional chocolate chips from 12 months, storage for 3 days at room temperature under a clean kitchen towel, and freezing is possible! Below are the simple recipe steps, either with a stand mixer or by hand 😉
Ingredients (6 rolls)
- 1/2 cup + 2 teaspoons warm milk (130 ml)
- 1 packet dry baker’s yeast (about 2 1/4 teaspoons / 7 g)
- 2 tablespoons agave syrup
- 2 1/2 cups T45/T55 wheat flour (300 g)
- 1 egg
- 3 1/2 tablespoons softened butter (50 g)
- 1 pinch of salt
- Egg wash: 1 egg yolk + 1 tablespoon milk
- Optional: chocolate chips (from 12 months)
Recipe steps
Mix the warm milk, yeast, and agave syrup, then let sit for 10 minutes.
Add the flour, egg, and salt. Knead for 3 minutes (with a dough hook or by hand).
Add the softened butter, then knead for another 3 minutes, until you get a smooth dough.
Cover and let rise for 1 hour in a warm place. Punch down the dough.
Divide into 6 dough pieces. Shape into balls and place on a parchment-lined baking sheet. Add the chocolate chips at this stage if desired 😉 I usually make half plain and half chocolate chip!
Let rise for 30 minutes under a clean kitchen towel. Make small slashes on top of the rolls. Brush with a mixture of egg yolk + milk.
Bake for 15 to 17 minutes at 350°F (180°C) (fan/convection setting), until the milk rolls are lightly golden.
Let cool on a wire rack for 10 minutes, then enjoy!
Tips for baby (10 months and up)
- Suggested portion: 1/2 to 1 small roll, depending on appetite.
- Allergens: gluten, milk, egg. Introduce them separately beforehand!
- Chocolate: yes, from 12 months, in small amounts 🙂
Storage
- At room temperature for 3 days, wrapped in a clean kitchen towel or stored in a paper bag.
- Freezer for 2 to 3 months. Thaw at room temperature, or microwave for a few seconds if needed!
FAQ
Can I replace the agave syrup?
Yes, with honey (12 months and up), maple syrup, or banana or apple puree (2 tablespoons).
Can I use plant-based milk?
Yes, unsweetened soy/oat/almond milk.
Can I replace the butter with oil?
Yes, use 2 1/2 to 3 tablespoons neutral oil (35 to 40 g). The texture will be a little less stringy and brioche-like!
Can I use fresh yeast instead of dry yeast?
Yes! Use about 0.7 oz fresh yeast (20 g) for 2 1/4 teaspoons dry yeast (7 g) 😉
