Today, I’m sharing a quick and super practical recipe: crustless leek, ham, and Swiss cheese mini quiches, made especially for baby… and approved by the whole family!
They are a great complete meal idea for a picnic, an appetizer, or even a quick lunch. These soft, melt-in-the-mouth little quiches make it easy to introduce leek into baby’s diet without the flavor being too strong.
The big advantage? No pie crust needed! Mix everything together, pour into muffin cups, bake… and they’re ready in no time.
–> Perfect for quick family lunches or to pack in the cooler for a picnic with baby!
Ingredients (for 6 mini quiches)
- 1 leek white (about 2.6 oz / 75 g)
- 2 eggs
- 1/3 cup whole milk (80 ml) (or follow-on formula if needed)
- 1.4 oz ham matchsticks (40 g) (nitrite-free if possible)
- 1/3 cup grated swiss cheese (35 g)
- 1 tablespoon flour (optional, for a more “flan-like” texture)
- 1 teaspoon olive oil
- Optional: a pinch of fresh herbs (chives, parsley)
- Salt and pepper (from 12 months, optional)
Preparing the mini quiches for baby
Prepare the leeks:
Wash the leek whites, then slice them very thinly. Sauté them in a pan with a little olive oil for 10 minutes over low heat, until they are very tender.
Preheat the oven:
Preheat to 350°F (180°C) convection.
Mix the quiche base:
In a bowl, beat the eggs with the milk. Add the flour (optional), the ham (I cut it even more finely), the grated Swiss cheese, the cooked leek, and the herbs if using. Mix gently.
Pour into the molds:
Divide the mixture among well-buttered muffin cups or silicone molds.
Bake:
Bake for about 20 minutes (keep an eye on them, as every oven is different!). The mini quiches should be golden on top and set in the center.
Cool:
Let cool until warm before unmolding.
Storing the mini quiches
- Refrigerator: up to 48 hours in an airtight container.
- Freezer: yes, up to 2 months. Let them cool completely before freezing individually. Thaw in the refrigerator or reheat directly in the oven at a low temperature.
Tip for baby
You can cut the mini quiches into strips to make them easier to hold for baby-led weaning (finger food). Perfect for building independence at the table!
Frequently Asked Questions
Can I replace the ham?
Yes! You can replace it with shredded cooked chicken, or simply leave it out for a vegetarian version.
Can I use a different cheese instead of Swiss cheese?
Of course. Comté, Gruyère, or even shredded mozzarella all work very well.
Is a dairy-free version of these mini quiches possible?
You can choose a plant-based milk, such as oat or rice milk, and a meltable plant-based cheese.
