At home, we have a real weakness for creamy pesto. It is our “magic” sauce that everyone loves, and it goes beautifully with so many vegetables: cauliflower, broccoli, zucchini, tomato… delicious every time!
In this version, I pair it with steamed broccoli and very tender rice for a mild, flavorful family meal that comes together in no time. It is a recipe I can easily adapt for baby from 12 months: I adjust the texture (very soft broccoli, smooth sauce, well-cooked rice) and season separately for the adults if needed.
The ingredients are simple, the flavor is comforting, and leftovers reheat very well the next day. In short, it is an easy weeknight dinner that checks all the boxes!

Steps
Rinse the rice under cold water until the water runs clear, then cook it according to the time indicated on the package and drain it.
Wash the broccoli, cut it into small florets, then steam for 7 minutes, until very tender.
In the blender bowl, add the basil, Parmesan, a very small pinch of garlic, and a generous drizzle of olive oil, then blend until fine.
Remove from the blender, add the sour cream, mix well, then thin little by little with hot water until you get a smooth sauce that lightly coats the spoon.
Taste and adjust the texture (a little more hot water if needed) and the seasoning for adults only. Do not add salt to baby’s (or children’s) portion.
Plate the dish: add the rice, top with the broccoli florets, then generously spoon the creamy pesto over everything.
For an extra-gourmet option, add grated or shaved Parmesan to the older children’s and adults’ portions just before serving!

Storage
– Rice and broccoli: 2 days in the refrigerator in an airtight container.
– Sauce, stored separately: 48 hours in the refrigerator. Reheat gently, thinning with hot water if needed.
– Freezing: you can freeze the rice and broccoli, but avoid freezing the cream-based sauce because it may split.
FAQ
Can I replace the sour cream?
Yes, with soy or oat cooking cream.
Is Parmesan required?
No. You can reduce the amount or leave it out completely!
