Almond Pancakes for Baby
Almonds are tree nuts that are excellent for health: they are rich in vitamins, protein, fiber, magnesium… in short, they are packed with benefits! According to scientists, we should eat tree nuts every day to stay healthy 🙂
But almonds can also unfortunately be quite allergenic. Allergists now recommend introducing as many fruits and vegetables as possible into baby’s diet as early as possible to help prevent the development of allergies. But before introducing almonds into baby’s diet, the best thing to do is:
- Check whether there is any family history of tree nut allergies (almonds, hazelnuts, walnuts…)
- Talk with baby’s pediatrician before introducing them 😉
I prepared this recipe without milk (using water) so it can work for all babies (I am thinking of babies with cow’s milk protein intolerance 😉). You can, however, replace the water with milk in this recipe if you wish!
In this recipe, I decided to introduce almond in powdered form into my pancake batter. For busy mornings, one little almond pancake and off we go for a good day 🙂

For 10 small pancakes:

Preparation
As I was saying, this recipe is extremely simple and quick to make. I often prepare it the night before, and in the morning all I have to do is cook my pancakes three at a time on my crêpe pan!
In a small blender, place all the dry ingredients: 1/2 cup flour (70 g), 1/2 cup ground almonds (55 g), the tablespoon of sugar (optional! And only from 12 months 😉), and 1 1/4 teaspoons baking powder (5 g).

Turn on the blender for a few seconds just to mix the dry ingredients.
Then add all the liquid ingredients: the egg, 1/2 cup water (120 ml / 12 cl), and the tablespoon of oil.

Blend everything until the pancake batter is nice and smooth, and from that point on, do not touch it! Let it rest quietly for at least 1 hour (I personally prepare it the night before and place it in the refrigerator overnight 😉).

Once the batter has rested, do not stir it. The baking powder has done its little job, and if you want fluffy pancakes, leave the air in the batter.
Cooking
Time to cook! Heat a crêpe pan or skillet (use whatever you have) over low/medium heat after rubbing the whole surface with a paper towel lightly coated with neutral oil.
Then use a tablespoon (do not stir the batter!) to pour the batter into the pan, using 2 tablespoons of batter per pancake.
After about 3 minutes, once small bubbles form on the pancakes, you can flip them with a spatula.

Let them cook for another 2 to 3 minutes on the other side, and there you go! They are ready!
These almond pancakes can be offered for breakfast, as a snack, or occasionally for a little hunger during the day.
