Today I’m sharing our favorite seasonal soup right now, tested and approved by Alix and Sasha: red kuri squash, carrot, and potato.
It is very mild, naturally sweet, perfect for the beginning of food diversification, and ideal for busy evenings! I blend it thick for younger babies because it is easier to spoon-feed, a little thinner for Alix, and sometimes I add a spoonful of cream… or nothing at all for a dairy-free version!
I hope your babies enjoy it as much as we do at home! Tell me in the comments how you adapted it! 🙂
Ingredients
For about 2 cups thick soup (500 ml):
Preparation
Wash and peel the red kuri squash, then cut it into cubes. Peel and slice the carrot and potato.
Steam for 14 minutes, until all the vegetables are very tender.
Blend with the cooking water, adding it little by little until you get the desired consistency. Adjust the amount of water depending on the texture you want (thicker for younger babies, thinner for older babies).
Serve warm. Add sour cream if you want a creamy, mild texture. Do not add salt before 12 months!
Variations
- Dairy-free: replace the cream with 1 tablespoon of oil (canola/olive) or plant-based cream.
- Protein: add 1 1/2 to 2 tablespoons cooked red lentils (20–25 g) or 3/4 oz cooked chicken (20 g), then blend.
- Mild spices (from around 9 months): a pinch of mild curry powder or nutmeg.
Storage
- Refrigerator: 48 to 72 hours in an airtight container.
- Freezer: 3 months, in portions. Thaw in the refrigerator, then reheat gently before serving.
FAQ
Can I add salt, a bouillon cube, or salted butter?
Avoid them before 12 months. No salted bouillon cubes. Season the adult portions when serving 😉
Can I add spices and herbs?
Yes, in very small amounts: nutmeg, mild curry powder, sweet paprika, or parsley. Introduce one new ingredient at a time.
Can I keep the skin on the red kuri squash?
Yes, if it is organic and well scrubbed. The texture will become smoother after blending.
The soup is too thin/thick. What should I do?
Too thin: blend it again with a little cooked potato or thicken it over low heat. Too thick: add a little cooking water or hot water.
Can I add onion or garlic?
Yes, in small amounts, well cooked and blended, depending on your baby’s tolerance.
