This recipe is one of our favorite “comfort food” meals at home. It’s a huge hit with Alix and Sasha whenever I make it: the sweetness of sweet potato, the lightly caramelized flavor of golden mushrooms, and the soft-boiled egg with a runny yolk (from age 3; otherwise use a hard-boiled egg)… everyone loves it!
It’s the kind of meal I make when I want something quick, balanced, and fuss-free, but that still feels like a truly cozy little homemade dish.
Sweet potato is a vegetable children usually love, thanks to its naturally sweet flavor and silky texture. The mushrooms cooked with a little onion and a touch of cream add a really lovely umami note. And the soft-boiled egg… it’s the finishing touch: it adds protein, softness, and turns the dish into a comforting bowl.

Ingredients (for 2 adults + 2 children)
- 1 large sweet potato
- About 10 button mushrooms
- 1 small yellow onion
- 2 to 3 tablespoons sour cream
- 1 tablespoon soy sauce (optional but delicious)
- 4 fresh eggs
- Herbs: chives or parsley
- A generous pat of butter
- Bread soldiers
- Salt & pepper in the adult plates
Preparation
1. Prepare the sweet potato
Peel, rinse, and slice the sweet potato. Steam for 10–12 minutes, until very tender.

2. Onion
Meanwhile, finely slice the onion and sauté it in a hot pan with a drizzle of oil.

3. Mushrooms
Add the mushrooms, sliced or cut into small wedges. Let them brown well for a few minutes.

4. Mushroom sauce
Add 1 tablespoon soy sauce, stir, then add 2 to 3 tablespoons sour cream plus a little water to make a creamy coating sauce.
5. Cook the eggs
Cook the eggs for 5 minutes 30 seconds in boiling water, then immediately plunge them into cold water. If you have a baby under 3 years old, cook their egg longer, up to 10 minutes, then plunge it into cold water.

Peel the eggs after stopping the cooking in cold water.
6. Prepare the sweet potato purée
Blend the sweet potato with a little cooking water and a pat of butter until you get an ultra-smooth texture.

7. Plate the dish
Assemble the plate: a generous base of purée, creamy mushrooms, the soft-boiled egg cut in half (or the hard-boiled egg), a few fresh herbs, and bread soldiers.
8. Seasoning
Season directly in the plate for adults.

Why is this great for baby?
- Sweet potato is perfect for early meals: mild, easy to digest, and naturally sweet.
- Creamy mushrooms can be offered blended from 8 months (or in small pieces if baby is eating pieces).
- A soft-boiled egg can be offered from age 3, but hard-boiled egg from 6 months. It can be mashed for a younger baby.
- The dish is complete: vegetables + protein + starch (if you add bread or a little rice).
Texture
- Baby < 12 months: plain sweet potato purée, blended mushrooms, and 1/3 mashed hard-boiled egg from 6 months.
- Baby 12 months and up:
→ purée + finely blended mushrooms
→ mashed hard-boiled egg - Children over 3 years old / adults: served as is, with the runny egg (the best!).
Storage
- Purée on its own: 48 hours in the refrigerator, 1 month in the freezer.
- Creamy mushrooms: 48 hours in the refrigerator (they don’t freeze very well).
- Soft-boiled eggs: cook right before serving; they do not keep well.
