Today we’re making a friendly, shareable meal that everyone loves: quesadillas for baby and the whole family!
Baby quesadillas
Quesadillas are a traditional dish from Mexican cuisine. They are very easy to make and full of flavor. Originally from Mexico City, quesadillas are thin corn (or wheat) tortillas filled with melted cheese (I love using cheddar!) and other ingredients, then grilled until crisp on the outside with a melty center.
Here I decided to add vegetables: red kidney beans, corn, and avocado. Then cheddar brings a comforting touch. This combination is a big hit with children and the whole family!
I know my girls are going to love them every time I make quesadillas, and honestly I’m thrilled because this recipe is incredibly simple and quick.

How to prepare baby quesadillas
You’ll see, the prep is very, very simple. Start by cutting the avocado into thin slices (you can also mash it into a puree; that works too! It all depends on the texture you want).
Drain the corn and red kidney beans.
On one half of a tortilla, add some cheddar, a few slices of avocado, some red kidney beans, and corn.



Do the same with the remaining tortillas.
Cooking
In a hot skillet (over medium heat), melt a knob of butter.
Place the tortilla folded in half in the skillet. Cook for 1 to 2 minutes on each side, until the quesadillas are just golden on both sides. Our quesadillas for baby and the whole family are already ready! Repeat with the remaining tortillas (you can cook them 2 at a time in a skillet).

Cut each one in half to make quesadillas, and enjoy!
You can serve the quesadillas with a nice salad or sweet potato fries; it’s delicious.
Always watch baby while eating, especially here because we have red kidney beans and corn. Baby needs to be comfortable with pieces. Otherwise, feel free to mash or puree the ingredients well before placing them in the tortillas.

Storage
I recommend enjoying these quesadillas for baby and the whole family right away. You can still store them for 24 to 48 hours maximum in the refrigerator, then reheat them over low heat in a skillet so they get crisp again 🙂
