Today, we’re cooking spinach for our babies. It may be a cliche, but children often flat-out refuse spinach when it’s offered to them! Is it the color? The texture? What it’s paired with?
In any case, this recipe was a hit with the girls here—they loved it!
Sticks for Baby
It’s true that having a baby who eats pieces of food with their fingers is really practical… I can say that because Alix only ate purées until 18 months, while Sasha wanted finger foods from 9 months!
So I try to make finger foods fairly often, or at least give them as many foods as possible that they can eat independently on their own (under our supervision at the table, of course), because they love that too. Alix has been eating on her own for quite a while now, but Sasha, who is 11 months old, definitely prefers eating by herself with her fingers! She handles it on her own—so great!
These little sticks are packed with spinach, so the flavor is still there, but it’s paired with the taste of cheese and the potato adds the starchy element and helps the sticks hold together well.
A little onion for extra flavor: perfect!
The flour will also help the sticks hold together and make them easier to shape. You’ll see, it’s not that simple, but we’ll get there 😉
Here’s what you’ll need to make these Spinach, Potato, Mozzarella and Parmesan Sticks for Baby (from 10 months, makes about 10 sticks):

Preparation
Start by washing the spinach leaves very well. When I say wash, I mean several rinses—they are often full of sand and soil!

Then prepare the potato: wash it, peel it, and slice it thinly.

Finally, finely slice the onion.
Place everything in the steamer basket and steam for 12 minutes.
In the meantime, prepare the other ingredients so they’re ready when needed.
Once the vegetables are cooked, drain them very well: this step is sooo important! You really need to remove as much water as possible from the vegetables, otherwise shaping the veggie sticks will be difficult, or even impossible. You can use a paper towel, or even squeeze the vegetables—especially the spinach leaves—in a clean kitchen towel.
Add the egg yolk and mash everything in a bowl until the mixture is well combined, with as few large pieces as possible (this will also depend on the type of potato used, but it’s fine to keep a little texture ;))

Add the flour, mozzarella, and Parmesan, then mix again.

(For even easier shaping, I recommend placing this mixture in the refrigerator for about 15 minutes.)
Now it’s time to shape the sticks… You’ve got this!
Put a little flour on your hands and on your work surface, then take some of the mixture and shape about 10 sticks in total. Roll the sticks in the flour. Make sure there isn’t too much flour on the sticks before cooking (try to use less than I did, actually ^^). Of course, you don’t have to make this shape—you can make whatever shape you like 🙂


Cooking
Heat a little cooking oil in a skillet over medium heat, then add the sticks. Cook for 6 to 8 minutes, turning regularly!
